Butterfly pea flowers are commonly found in South East Asia. Interestingly referred to as ‘Blue tea’ or ‘Asian pigeon wings’, and ‘nam dok anchan’ in Thai, it is well-known for its beautiful bright blue colour. Due to its sensitivity to acidity such as lemon juice, it is used in cocktails and special tea blends. Once infused with acidic mediums, an instantaneous reaction occurs where the blue colour changes to a pinkish infusion. Flavours of this bright blue flower taste like green tea but with some earthy and woody notes. Utter beauty in a single cup!
