Ripe Pu-Erh involves an induced fermentation to arouse the colour, which was first introduced to the tea world back in 1973. Ensuring the consistency of fermentation of the leaves to produce a full-bodied drink that is round and strong-flavoured is an important part of the process in order to maintain every goodness of the Pu-Erh.
