Bancha Hojicha

Japanese Roasted Green Tea

Bancha is a classic Japanese large-leaf green tea made from the lower shoots of the tea plant. It contains substantially less caffeine than Sencha teas which are made from young shoots. Bancha Hojicha is made by roasting the Bancha leaves at high temperature until they turn reddish-brown. Filled with aromatic flavours, with roasted and nutty notes. This tea can be enjoyed with a slice of lemon or orange.

Taiwanese Green Tea

Translated as ‘Green Spiral Leaves of Spring’, once infused this tea boasts an outstanding distinctive moist crisp fruity aroma. Peach, apricot and plum trees are planted among the bushes. When these fruit trees bloom, the tender spouts and buds of the tea absorb the aromas. This tea has a lingering sweet aftertaste.

Japanese Green Tea

A top-class Japanese Sencha tea also known as the ‘Dew of Pearl’ or ‘Most Exquisite Dew Drop’, Gyokuro tea plants are grown in the shadow of broad-leaved trees and shaded with bamboo mats for two weeks before being plucked to boost the chlorophyll content and the green character of the tea. The perfect example of the four elements and seasons, where you go or how long you go for on your exciting tea adventure is always unpredictable with this tea. Maximum of two leaves and one bud are hand plucked and dried with delicacy to reveal a mosaic of floral, woody and sweet aroma and flavours, changing with every infusion. Fragrance and drinking cups are used to appreciate this unique tea.

Da Yu Ling***

Da Yu Ling has a wonderful fragrance and taste. It is a lightly oxidised oolong tea with a refreshing palate that is sought after by the most demanding tea connoisseurs. Da Yu Ling is produced in limited quantities and is one of the most prized teas of Taiwan. Da Yu Ling oolong tea is a premium-grade oolong tea from the Da Yu Ling area of Taiwan’s Taichung county, Mount Li area (Li Shan or Pear Mountain). Its high altitude (more than 2600 meters) makes this one of the highest tea plantations in the world. High altitude plantation of Da Yu Ling means that tea leaves grow slower and hence translate and develop its rich flavours slower into our mouths. To fully appreciate this fine oolong tea, brew it in the gong fu style.

This tea was introduced and developed in Taiwan following Japanese research on the GABA molecule during the 1980s. Gamma-aminobutyric acid (GABA), a chemical made in the brain. An inhibitory neurotransmitter, GABA reduces a nerve cell’s ability to send and receive chemical messages throughout the central nervous system. GABA is an amino acid that helps to regulate mood; hence GABA is at times referred to as the calming neurotransmitter. It is known for lowering stress and anxiety.

Also known as ‘Bai Hao’, ‘Pong Hong Dei’, ‘White-Haired Oolong Tea’ or ‘Champagne Formosa’ – this is the finest of some of the best Oolong in Taiwan. This highly oxidized tea boasts a sweet smooth taste, slightly baked and floral aroma and a somewhat fruity and honey scent. The origin of its name dates back to the early 20th century when locals named it ‘You must be Joking Tea’ after an interesting tea making accident. A British tea merchant presented a sample of this tea to Queen Victoria and the grand name “Oriental Beauty” came to life.

Well known as ‘Red’ or ‘Red Jade’, this is the one of the highest fermented oolong in the category of oolong produced in Fulu Tea District, Taitung County Taiwan. The fermentation level is known to be as high as 80-90%, hence it is also known as the black tea of oolong. Correctly termed, its unique production method of stirring tea leaves over heat, (key step of oolong production) and undergoing full black fermentation. This highly oxidised tea is rich in brown colour like a black tea, yet manifests a rounded sweet oolong aroma and mouth feel. For those interested in the tea history, Asia’s “Red” tea is translated to “Black” tea in the West, strangest things happen in history.

This famous tea is made from tender and healthy green tea shoots hand-picked in spring. Long leaf tips are scented with freshly cut jasmine blossoms which are then rolled into small pearls. The pearls seem to dance as they unfurl in the pot.

Osmanthus*

Taiwanese Scented oolong

Oolong has a wide range of fermentation between 25% and 70%. This Oolong manifests a fermentation of around 40%. This Taiwanese Oolong is based on the traditional specialty of the province of Gangxi in the south of China. Small-leafed Oolong tea leaves are mixed with fresh Osmanthus blossoms from Northern Taiwan’s perfect climate and landscape. Harvested early in the morning between 4 and 7am to reflect the best aromatic qualities for the scenting process before dried together with Oolong. Well-known for its relaxation and digestive properties, this yellow infusion has a mild, fruity flavour reminiscent of caramel. Osmanthus blossoms are amongst the three most celebrated blossoms in the East, alongside Jasmine and Chrysanthemum flowers. Due to the semi-fermented category of this fine oolong, it can last as much as 5 consecutive infusions, with the first few infusions representing grassy green tea followed by the last few infusions representing woody black tea… All while embraced in elegant blooming fragrance.

Assam full leaf 2nd flush tea has a typical strong and earthy flavour. Bukhial is a tea estate belonging to and managed by George Willamson Assam Ltd – the world’s largest privately held tea plantation group in India. Situated on the south side of the Brahmaputra River in the state of Assam near a remote region called Nagaland, wild elephants still roam the state, but it could be worse; a century ago headhunters also lurked in the forests! In this area, rainfall is lower, so the bushes grow slower resulting in an outstanding tea, and if well-made, this orthodox tea produces a strong, mature cup full of character.

This fine Ceylon comes from the Dimbula area in the Sri Lankan Balangoda District. Thanks to its excessive moisture in rainy seasons and ultra-fertile topography, a dark red colour, highly aromatic and simultaneously mild taste is the combination of the outcome of this fine Ceylon. The infusion is equally excellent without milk, which makes Ceylon an excellent representation of a fully-fermented tea of about 95% in the black tea category.

Pu-Erh is grown in the Chinese province of Yunnan. It experiences fermentation after bering processed before being cellared and re-fermented under humid conditions, sometimes for several years. Well-known in Asia for its medicinal properties, top quality Pu-Erh teas are sold at auctions at sky-high prices.

Pu-Erh Royal 2007**

This Pu-Erh is grown in the Chinese province of Yunnan. Young leaves and buds from old trees are hand harvested and carefully selected in early months of the year between February and March in order to capture the most tender part of Pu-Erh. The appearance is unique and distinct with golden yellow aged buds as a result of the traditional fermentation process in humid conditions. In the history of Pu-Erh, all Royal Pu-Erhs were used as offering for Chinese Royals for hundreds of years. Used for diplomatic gifting, they are sometimes referred to as the ‘Treasure Pu-Erh’ or ‘Tribute Tea’. This vintage cup is deep red with a distinctive, earthy taste and an energy that reflects ancient wisdom and countless stories.
